Ingredients:
• 2 large eggs ( whipped with a pinch of salt and pepper)
• 1 fresh red chilli
• 1 small green chilli
• A small onion- finely chopped
• 1 tsp. mint chutney
• A small handful of steamed spinach leaves or raw lettuce leaves
• A few drops of oil

Method:
1. In a large non-stick pan over medium heat, add olive oil. Pour the egg mixture and swirl gently to spread out thinly across the entire pan.
2. Sprinkle the eggs with chopped red, green chillies and raw onion
3. Gently run a spatula underneath the omelette and remove it out of the pan onto a plate
4. Spread the mint chutney across the surface of the omelette and then sprinkle with the steamed spinach leaves or lettuce.
5. Starting at the end, roll the omelette away from you.
6. Serve hot.
