Ingredients:
• 3 egg whites.
• 1 cup of raw vegetables(finely diced) - mushroom, tomato, coloured capsicum, zucchini, shredded carrot etc.
• 2 slices of toasted whole-wheat or multigrain bread
• Salt and pepper-to taste
• ¾ tsp. chilli flakes
• ½ tsp. mixed herbs( rosemary, thyme, basil, oregano)
• ½ tsp Olive Oil

Method:
1. Separate the egg whites and beat until fluffy. Add salt, pepper, chilli flakes and the mixed herbs. Whip again to mix it well.
2. On a non-stick pan, lightly sauté your vegetables in 1/2 tsp. olive oil for 10 minutes. When vegetables are semi-cooked, pour the egg white mixture over them. Cook for 5 minutes and turn over to cook on the other side. Make sure it gets nicely browned
3. Remove from flame and place between the toasted brown bread slices, to make a delicious and healthy sandwich.
